Buckwheat muffins with apple filling (video)

Huh.. I could describe these muffins with a lot of words in the title: vegan, glutenfree, apple-cinnamon filled, buckwheat muffins. Well, that would be the title, if it wouldn't look hilarious amongst the recipes.😄The markets are full of beautiful apples, especially this time of the year. So I thought it would be the perfect time to share this recipe with you. My favourites are those sour apples, and we really liked that sour apple filling in the middle of the muffins. But you can use sweet, red apples too.

Ingredients
(for 12 muffins)
150 g buckwheat flour
50 g oat flour
50 g oatmeal
pinch of salt
1 tsp baking powder
3-4 tbsp coconut sugar
2 ripe bananas
2 tbsp flax seeds + 4 tbsp plant milk
2 tbsp peanut butter
1,5 dl canned coconut milk
1 dl plant milk
filling: 2 smaller apples, cinnamon, lemon juice

For the filling: chop apples into little cubes, and saute with cinnamon and lemon juice until tender. Mash bananas with a fork, and mix in all the ingredients for the batter until smooth. Spoon the batter into the muffin tins, but just for the half of the tin. Then add a few apple cubes into the middle of the batter, and cover with the batter. You can top them with apple slices and cinnamon. Bake for 20 minutes on 200°C. Let them cool and remove from the muffin tin.
