Cinnamon cake with grapefruit icing

I would like to open this year's autumn season with this cinnamon cake. Autumn is my favourite season, but it wasn't a secret. :) The first spice what is come to my mind this time is cinnamon. So welcome autumn with this cinnamon cake. You can use any kind of flour you want. For sweetener, I recommend to use coconut sugar, because it gives an extra flavour to the cake. You can use chia seeds or eggs instead of flax seeds.

When it comes to taking photos to my blog, I really like to pay attention to every little details. Maybe it's just a prop, or my clothes colour, texture or changing compositions... everything can change the atmosphere of a photo. Actually, that's what I love about photography. I made a little video to show you a tiny bit of this progress. That's how this composition gets its final form. :)

Ingredients
For the cake:
1 cup wheat flour
1 cup whole wheat flour
pinch of salt
1 tsp cinnamon
2 tsp baking powder
2 tbsp coconut sugar
10 g cacao powder
2 tbsp flax seeds
1/2 cup margarine
1/2 cup plant milk
icing:
5 tbsp icing sugar
1 tbsp grapfruit juice
pinch of beetroot powder for the colour

Mix all the ingredients until you get a smooth texture. Pour the batter into a greased mold. Bake it for 40-45 minutes on 190°C, check it with toothpick test, it's ready when there is no sticky dough on the toothpick.
For the icing, mix ingredients until smooth. Once the cake is cool, remove it from the mold, and pour the icing over it. Top with fruits.
